1In a small pot (medium pot for 4 servings), combine chicken stock concentrate , honey , half of the white wine vinegar (you'll use the rest later), half the sage , 1 1/4 cups water, 1/4 teaspoon cinnamon (be sure to measure; we sent more), and a pinch of pepper. (For 4 servings, use all the sage, 2 cups water, 1/2 teaspoon cinnamon, and 1 1/4 teaspoons salt.) Season with salt. Add a pinch of black pepper . 2While the braising liquid heats, wash and dry all produce. Trim, peel, and halve parsnips lengthwise; cut on a diagonal into 3/4-inch-thick pieces. Trim, peel, and cut carrots on a diagonal into 1/2-inch-thick pieces. Halve any thicker carrot pieces lengthwise so all pieces are roughly the same size. 3Once the butter has melted in the pot, add the parsnips, carrots, and garlic; partially cover the pot. Continue to cook over medium heat until the vegetables begin to soften, ⏱️ 10 minutes . 5Pat beef tenderloin steak dry with paper towels and season all over with half the Bold & Savory Steak Spice (use all if making 4 servings), salt, and pepper. While vegetables are still cooking, heat a drizzle of cooking oil in a large pan over medium-high heat. Add the beef and cook to your desired doneness, ⏱️ 4 minutes to ⏱️ 7 minutes per side. Turn off the heat; transfer the beef to a cutting board and rest at least ⏱️ 5 minutes . Slice the beef against the grain. 6Return the large pan to medium-high heat. Add 1/3 cup (or 2/3 cup for 4 servings) braising liquid from the pot; bring to a simmer. Cook until the mixture reduces and thickens, about ⏱️ 3 minutes . Turn off the heat; mix in a remaining 1 tablespoon butter (or 2 tablespoons for 4 servings) until melted. Season with salt and pepper. -
7To the bowl with the dressing, add the mixed greens with croutons , and half the Parmesan cheese ; toss until coated. Season with salt and pepper if you like. With a slotted spoon , lift the braised vegetables from the pot and divide them among plates. Lay the sliced steak pork and salad alongside this. Spoon the braised sauce over the steak; sprinkle the remaining Parmesan cheese on the salad; and serve.
